I am 6'1" and I currently drive a 964 and I am reasonably comfortable. Will a 356 coupe fit me about the same?

height wise, no problem - the 356 is the Tall Guys vintage sports/GT.

My best friend is 6'4" and fits his Speedster easily. A mutual friend is 6'8" and fits a C Coupe with the seat all the way back and the seat back canted back a good bit, but he fits. The 356 is one of the most spacious sports cars ever made.

I am 6' 1" and am constanly amazed how much room there is inside these little guys. They are quite comfortable.

Lots of room. I have owned quite a few of them and at 6'5" I have more room than I need. When I bought my first 356 in 1967, after an affliction of some British covered wagons (TR3, big Healeys, etc.), I knew I would never look back. BTW, the early 911s are the same.

I am 6'2" and drive a 356-B Sunroof Coupe. The sunroof brings the headliner down a bit (over non-sunroof cars), but even with a baseball cap on, I don't hit the top.
You'll be fine.

6'1" and no problems in either my T5B coupe or T6B cabriolet. In fact, a friend and I drove his A coupe nearly 900 miles (round trip) to Melbourne and back and he's about 6'4".
