TC, if you go to Fuchs, you'll want to install longer studs - from 40 to 45 mm, if I recall. tire clearance is a highly variable matter; often on the rear of a 356, one side is tighter than the other, also, rear camber setting is a factor, + of course the tire size & even manufacturers varying designs.

A Buddy has some pretty narrow Phonedials, but I didn't know if they'd fit or even if they'd look "right" on the car.
I noticed the difference in spacing, side-to-side, on the rear of my '55 and couldn't figure it out. I ended up deciding it was a body flaw, maybe a very early accident that was repaired well. Thanks for mentioning it KED, I feel MUCH better knowing that's it's a 356 thing and not unigue to my car.

the offset was changed in late 72 on the Fuch's and typically will not clear the fenders with a 185mm tire (and some 165mm's)
the early pre-72' Fuch was a great wheel combo w/ a 185-70 or 185-65 tire Plus it is about 1/2 the weight of the steel wheels and is lighter than the later cast wheels as well.
