Vinnie Colosino at Gulf Performance in Pompano Beach is your guy.

It is a much bigger operation with more layers (including car sales), and as such it seems slightly more like dealing with dealer service. Usually your point of contact is a service manager. I have spoken to the mechanics directly about my cars a couple times, and I like and trust them. I just prefer to speak directly to my mechanic, not a service manager or someone who is not working on my car.

I also just like dealing with Vinnie. I can talk to him directly and he is an old school guy and a straight shooter. Don't be in a hurry, they are busy and can take some time but he does things right.

You can't go wrong with Gulf Performance; agreed. However if you work or spend time in south Miami, I highly recommend European Auto Center. The owner Luis Gill has been there 25+ years, is very honest, knowledgeable and very fair pricing. Not the fanciest shop in the region (that goes to Parkhaus1) but more than capable. He only works on Porsches and 80% or so are air cooled. They are a bit below the radar however I prefer that.
