991 20" Sport Classic replacements
Hi
I currently have the 20" Sport Classic wheels on my 991 C2 50th Anniversary:
F 9x20 245/35 ET51
R 11.5x20 305/30 ET48

Since I will be tracking the car I wanted to step down to 19's with optimal rubber sizing.

The wheels seem to be reasonably priced at $1,700 and as you can tell, I like the classic Fuchs look.

Otherwise I have my eyes on a used set of OEM 997 Turbo 19" wheels on eBay with close offsets (F 56 / R 51), so 7-10mm spacers would make sure they work while widening track a bit.

For either wheels I'm looking at Toyo Proxes R888's rather than the typical PSS or PS0 setup.

For the track I would recommend forged wheels. Especially for such a heavy car.
CCW is a good option that is usually reasonably priced.

Keep in mind with any different wheels, it's quite likely you'll need another set of wheel bolts. You definitely will if you use spacers.
If you go with used wheels for the track, I would make sure they've been used very little with a known history. And if they've been messed with (repainted or reassembled if multipiece), that it was done properly.
Fuchs, the original manufacturer of, well, the original Fuchs, now remakes them in 19", and they probably offer a 991 fitment. Probably quite expensive though.

BTW, your tire selection of 235/35-F and 295/30-R is quite a bit smaller in diameter than your stock setup. <---Edit: ignore that. Did not take into account wheel diameter change!
