How difficult is it to care for the seats? Does Dye from jeans stain them? Really a beautiful interior. Might be too much heartache?

I always drive with jeans and no stains so far on my slate grey/chalk interior. Easy to care for- if you see some dirt, just wipe off with a damp rag.
I would not hesitate to say your fears are unfounded.

All slate grey leather interior. 14,000 miles and 2 1/2 years. Looks just like it did the day I took delivery.

I have chalk seat centers, wear blue jeans and have 8000 miles and no issues.

I do not wear jeans, however on rare occasions my wife does. I have not seen any noticeable dye transfer anywhere on either seat. I have the slate gray/chalk interior.
Only 3,5xx miles. I do routinely clean the interior in order to prevent such travesties of showing use. : )

I have had no problem with dye transfer, and the upkeep has been easy thus far. I only have 3k on the clock, however.

All the feedback here and seeing a 991 in-person sealed the deal for me to spec chalk/slate. I'm at 400 miles and just curious to everyone's care routine specific to dye transfer? I do wear blue jeans
I did buy the colorblok shield, but it on the slow boat shipping from the UK.

Can report that after ~1 year of ownership, the chalk seats look brand new. No jean dye transfer. Seats are untreated.

I recently picked up a new GTS w/ blk/chalk interior. Good to hear others have not had issues w/ dye transfer. FWIW, I am planning to use Gyeon Q2 Leathershield (SiO2 ceramic coating) on the seats. Supposed to help keep the seats clean resistant to stains/dirt. From what I've been able to find out, it does not alter the color or the softness of the leather.
