Do these cables work for a stock shifter setup? Or only with the numeric shifter?

Does the whole group have to buy the shifter or mounts to get the discount on them?
How much height does the Numeric shifter add vs the standard OEM shifter?

No the whole group does not have to buy the shifter or mounts to get the discount on them.

The Numeric shifter does not add any height unless you change the lever to the highest setting, then it would add 20mm.
