Not a salesman, but IMHO...
1) CB preferred over steel - my experience with Ferraris both steel and CB is I prefer steel. CB isn't really suited unless you track and then if you don't track a bunch. CB around town as a soft feel until they get really heated up like on a track. For people that track a bunch even for a Ferrari/Porsche owner the costs of CB replacements get old. There are companies now that specialize in doing the steel brakes on Ferraris that never came with them.
2) racing buckets - I have fallen in love with the seats as much as anything on the car. I retired from racing back in 2011, so I don't even like to track anymore. However, these racing seats are so supportive and comfortable even as the city car I've been using it for. Yes, make fun of me for not using the car as it was meant.
3) interior with the yellow accents too much for them. - The yellow exterior has grown on me, it looks so good on the Porsche and GT3, my next Porsche will be Yellow too. Not sure I would do the interior on anything except a GT2 or GT3, but it certainly works with the exterior and I actually like to keep most of my cars understated. Our latest Ferraris have been Grigio!

I'm surprised the feedback you've been getting on the bucket seats. My impression was that the bucket seats were a significantly more desirable than the sport seats, especially on the 991.1 generation where they are much rarer than the 991.2.
My guess is buyer's are just trying to negotiate, and say they prefer the sport seats.
