Like everything else, I guess it's in the eye of the beholder. I look at those photos and see a particularly lurid shade of pink. No way would I want a car in that colour, but if that's what turns you on go for it.
On the other hand, some of the 80's Carrera colours like gold or platinum that destro refers to look really great to my eye, at least on those particular cars. I nearly bought a white gold metallic '86 coupe with chocolate brown interior last year- would have bought it had it not failed inspection.
As the OP pointed out, pink, excuse me- Rubystone Red- certainly is period correct for a 964. Not that there's anything wrong with that.

You might want to be real carefull there.
In the Starbucks parking lot full of 100 K super cars , this car sure gets a lot of attention by the general public.
In fact the owner of one such super car brought his mom, she walked by them all and said " I like this one best" ..

If we were talking about a Bentley or a S Class Benz, a dark brown might be nice. But when it comes to hot sport car colours, I don't see too many brown 991.1s, especially GT3s and prospective buyers had 3 brown paint options... 3! In the 991.2 paint swatch palette we see there is an absence of brown, so either trends changed or low uptake.

Colours definitely trigger nostalgia. Some of more than others. Ruby Stone feels super early 90s to me, but that's also when I was in grade school, so good memories. I haven't seen ruby stone in person, but I hoping it looks more like this:

As for brown. I have a tobacco brown SC and frankly I get more compliments with that shade than any other colour I own or have owned. It is such a period colour and other than a 15-20 year window in the 90s to 2000s brown was always a strong shade for most car makers. Sure it is not as popular nowadays but witness Mercedes and Porsche and other car makers attempt to bring it back even to the slight degree. I still consider it a classy colour, but sadly not as popular as in the past. I have seen a few 997s and 991s in various brown shades and really like them a great deal. Resale value is hurt though as the usual crowd likes the shade but does not want to own it. Sad but true.

This was in Victoria BC recently--just imported (iirc from Japan) and may be going up for sale. Had the purple/pink seats--awesome. I think the colour is very striking in real life!

I'm a fan of strange, bright and out of the box colours on 911s. Especially the older cars. I am pretty sure I've seen a Rubystone 993 cab in Toronto on the east-end a few times. **quick google brought these pics up..this is totally it:
