If culture and scenery is what you're after, consider going to Havana and staying in a Casa Particulares - essentially Cuba's version of AirBnB, but you'll be staying with a family and they'll cook for you (there is good food in Cuba!). It's the best way to enjoy an authentic Cuban visit and you'll have a chance to meet some amazing people. I love the majority of locals I've met in Cuba!
Google it - you'll find plenty of info. The hosts can probably set you up with a driver for a few days here and there, depending on what you're after, and they'll definitely know someone with a '56 Chevy powered by a VW diesel!

EDIT: if you do lean more towards a resort for this trip, check out the Melia Las Americas - best resort we've (2 adults, no kids) been to in Cuba.
