Not sure what you are looking for.
Installing seats on a scale of 1-10 10 being Porsche car specific highest difficulty is a 1.
Any shop can do this simple install.

From the threads I've read, there's some custom work involved with sorting out aftermarket seats and belt receptacles. Don't have the time or the tools to do the job. I'm looking for a shop that I can build a relationship locally. Eventually, I would like to round out the safety components including half cage, harness, etc. A one stop shop that can also setup suspension for the track would be ideal.

Stop by any one of the shops mentioned and talk with them. You will get a good feel for which shop you feel most comfortable with. Again, this is a straight forward installation, assuming you have the correct parts.
Sounds like a fun project.
RED LINE (no affiliation) has worked on several of my cars including my 930. Marc runs a RS America car and knows P cars, race and safety mods well.

Which part of LA are you looking at?
Not a Porsche specific shop, but RS Speed Design in Glendale worked on installing my Recaro Pole Position seats in my 987 Cayman. They've also installed a bunch of other parts and mods on my Cayman to prep it for the track. I've seen their work on older Porsche 911s and other cars as well and they do great work. Give them a shot.
