50 offset (plus or minus a few mms) is what you're looking for.
You can run a 9" wheel in the rear and anything between 7 to 8.5" in the front.
Square setup is easiest (can rotate or buy one spare wheel for backup).
Again would suggest 225/235 front and 255 rear.

can I run a spacer on the 17" OEM wheels in the above mentioned ad to get the right offset? here's the link to the ad.

I'm sure the 8.5"x17" is a good choice, but my research (tirerack is the only one (sport edition cup 4 17x8.5" 45mm offset) that had the size listed online was $185US) - after shipping, tax, and exchange, that will be about $1475 cdn.

Again, I wouldn't waste your money on 7" front wheels for the track. That really limits your front tire width choices and you need front tire for track purposes.
I think I have some wheels that will work for you. Will shoot you a PM. I'm in the Collingwood area.

7s and 9s are fine. You can easily get a 225 tire onto the 7" wheel.
I tried the square setup and honestly preferred the stagger. For a new entrant to the DE world, the stagger is also a little safer from an oversteer/understeer perspective.
Those wheels will work just fine for now and should be easily resellable if you decide later to go square.

^ the point is that a 225 tire doesn't fit well (sidewall shape) on a 7" wheel.
An 8 or 8.5 front and 9 or 9.5 rear... or square setup... gives you more tire choices, better sidewall profile, better feel.
Better to buy the right stuff the first time around.
