All water cooled Porsches newer than the 996 have a heavily buffered coolant temperature gauge, which means it doesn't display the actual coolant temperature. It's essentially an idiot light disguised as a gauge. If it ever moves much past vertical you have a problem. If you want to know your actual coolant temperature you need an obd2 monitoring system that will display it on a phone app or something for you. Coolant temperature will actually get as high as 215 F under normal circumstances, like sitting in traffic or climbing a mountain. Normal temperature should be in the 180-185 F range, like when cruising down the highway. Just use the oil temperature gauge as the indicator of what the engine temperature really is - use a good synthetic like Motul or Driven and anything from 175-225 F is OK.

200 degrees on the dash is normal. As petza914 says you. Need an OBD reader that can read live data to see the real value.

Cooling is increased by opening the thermostat, and opening up the full cooling circuit. The oil cooler is oil to water cooler, the increased cooling with sport turned on, lowers the oil temp.
At least for the Pre 2019 Macan's, this is how the engine operating temp is controlled. (This is from the Service Information sales training manual)

For this purpose, the heating current is increased significantly again to open the thermostat (large cooling circuit) further. The temperature at the radiator outlet increases when the large cooling circuit is opened.
