Oil temperature
I've noticed over the winter that I my oil temp isn't stable. During the summer and fall it was a solid 220 in regular mode and went down to 210 in sport mode. Now it kind of fluctuates and never gets up to 220. Sometimes it will be really solid at a certain temp (like yesterday I noticed it stayed at 214 for a while). Sometimes it just drops for no reason (like from 212 down to 199 almost instantly, and then slowly comes back up). My auto start/stop isn't working either, and I am wondering if it's because of the oil temperature issue. I don't think the oil temp can really be that erratic can it? Seems like maybe a bad sensor?
How could I diagnose this issue, and is the oil temp sensor readily accessible?

The water temp is basically an idiot light as it will always report 212. You need to check with an ODB reader that can pull actual values from the ECU to see what the real temperature is. The oil pressure/temp are a single sensor. Located up on top of the engine near the oil filter. You would still want to check for any codes this will at least let you know what might be going on.

This regarding Porsche water temps on the gauges in anything newer than a 996, which had an actual coolant temperature gauge. My Cayenne gauge once warmed up always shows 180, but with the obd2 p3cars vent gauge I have, the actual temp could be anywhere from 175 to 214 degrees F and during all of this, the gauge still shows 180.
Actual oil temp can change by what you've observed, especially if the driving conditions change - 70 on highway to slower traffic, etc.

On my Macan GTS, water/coolant temp always shows 200 even, no matter what (my CTT was always 201).
The oil temp however varies a bit (not wildly though) generally in the 210-220 range in normal mode, roughly 190-200 range in Sport/Sport+ modes. Oil temps on my ‘11 CTT behaved similarly.
