Remove PORSCHE Letters before doing full wrap?
When doing a clear wrap, do you OCD people out there remove the rear letters of the car and order new ones to stick on top of the shield?

Absolutely. But if you're having PPF installed, take advantage of allowing them to do it. When my clients have us do it, I charge literally the cost to have the original emblems' tape stripped and recut by a plotter/taped up. It allows our clients to get a seamless wrap without spending extra on brand new emblems when the ones we removed are fine.
