I did cook outside and and just ate my meal inside when it started to drizzle. The jetboil is one of the safest cooking platform I know. You can even cook while holding the entire unit like a cup. Some mountaineers use it inside their tents too, but I'm afraid of carbon monoxide build up.
The coolbox is just a regular one that doubles up as a table and the fan has a rechargeable battery. The rear cigarette lighter at the back can only handle the air pump and is prone to blowing up fuses. I'm trying to figure out how to increase the amp load and also trying to figure out alternative solar power.

I also have an old 4 bike yakima carrier that I'm thinking of converting to a tire carrier. Need to test it if it can hold the weight. If not, I'll just get an ebay one.

Currently running General Grabbers on 18" wheels. Thought of trying the BF Goodrich tires, how do you like them? What size are you running?

The BFG KO2 runs like a stock tire since it's the same OEM tire size for me. Just a slight humming on the freeway. I won't be doing extreme rock crawling. Just staying to some fire roads and some puddles. Thinking of getting a goal zero for electric juice and hanging the solar panel on the roof rack too. I love your front bumper.
