Any decent shop should be able to bend up the pipe (some even have mandrel benders) and weld on a flange and do it for less than $100 per pipe.

I did, but I think most people keep the old cats to put back on, if/when they sell the car. In the Audi B5/S4 world, many people take their cats off and drill a hole in the cats, creating a little "bypass".
