Default Overheating

At Sebring this weekend I notice my temp in normal range then jumps up to max Hot then goes back down to normal. Does this sound like a faulty sensor or a thermostat that is hunting?

I have never seen one go up and down fast. How fast does it go up and down. Are you driving the same during the entire change?

Yes, like a crazed maniac. First time its happened and I have had the car from day-1. It was hot at the track but its been hot before.

Might be air bubbles in the coolant, too. I had issues just like that after my first novice attempt at a coolant change on my last car, until I went back and bled the air out properly.
