I would say lift and leather are must haves.
For me personal it is also Bose (to cut through the noise when you need it), 18 ways (because it is a fantastic seat) and rear view camera.

Very important:
PCCB - no brake dust which saves more than half the time while washing the car and the yellow calipers look and feel special.
Leather- simply feels and looks better.
Based on personal taste:
LWB Seats - they look better but less comfortable to get in and out of especially if used as a daily or with passenger.
Wart - IMO, the dash looks so much cleaner without one not to mention cleaning the dash is easier and from a drivers prospective- less busy, simple, more old school.
Sound package - I really like having the better sound quality, I rarely drive without music so that’s a personal choice but definitely a plus.
Heated seats - depends where you live, I use the feature in the winter time and glad to have it especially when my back hurts but not a big deal whatsoever.

My build sheet says “78 Black full leather”.
Sport chrono does nothing but be a chronograph in the 997 gt3’s.
i don’t think anyone would tell you to pass on a car without sport chrono. Many would tell you to buy it for that reason. It’s street name is the “wart” and for good reason. It’s reflection in the windshield can be distracting.

I'd second most of what has been said , but people have different tastes/ wants so in the end it's up to you . Here a few general observations I made looking at these cars over the years and settling on a 997.1 RS . I can't put my finger on why this is exactly , but the .1 cars look and feel smaller to me ; might be the center lock wheels , different bumper caps and larger wings on the .2 that makes it seem larger . I might be wrong on this , but the .1 GT3 comes standard with a sunroof which I don't care for on a GT car . Of course this isn't an issue on a RS . I've never thought of optioning a new car with PCCB's ( didn't on my 991.1 RS ) , but the car I bought has them and I do marvel at the lack of corrosion around the hubs , hats and hardware with everything looking basically new after 11 years . It's amazing that you don't have much cleaning to do after a drive too . On a .1 car I had always thought the Euro buckets would be a must have ( would still love them , just not for 25K ! ) , but found the standard seats supportive and easy to get in and out of so I'd try them before writing off a .1 . They are much better than they look . Lastly , I hate the look of the chrono and wrote off some nice cars that had it . I looked into swapping out the upper dash and it was a $4700 part if I remember correctly . Again ,this is strictly personal taste and if you like it go for it . It's just one of the few things that isn't too practical to change after the fact . Good luck with your search - these are all great cars .

I have commented before but I find the obsession over options somewhat surprising.
I have my own views of course and they differ from some of those expressed but in the end you buy the best car (and the best seller) period.
It reminds me of the bmw crowd obsession with "slicktops" which is silly to say the least. Bmws are sedans.

My feeling is that options are more important on your daily driver. In my case, I put 15-18,000 miles a year on my car. that's lot's of seat time and there are certain things that you really need.
When it comes to a GT3 it is all personal preference but I don't feel there is anything that is a must have. Most of these cars will see a few hundred to a few thousand miles per year. Not much seat time compared to a daily driver. The sport chrono "wart" doesn't really bother me. The one option that would drive me nuts is the red gauges. I don't know what it is about them but I just don't like looking at them. Someone else may feel the complete opposite. That's what makes life interesting........
