Default 2007 C2S oil temp gauge very inconsistent...

Hi all, my 997 has 30k miles on it. Over the past week, my oil temp gauge has been very slow to climb to normal operating temps. Once there it will hold for a bit, and then randomly drop down to 150° or even below. Oil level is spot on. I know that my problem is sensor related and should be a simple fix. Anyone else experience this? Pic for the help.

the pressure sender is easy - top of passenger bank - but the temp sender is difficult to get to, i believe. it's #27 in the diagram below but i guess my dumba** honestly can't tell if that entire assembly is internal (bitch to get to) or external (not that bad).

Just to add I can confirm that the oil gauge does fluctuate a bit - even with a new sender it can do what you describe.
