New clutch recommendations?
I've been told me 2002 turbo needs a new clutch and slave cylinder.
It seems to function correctly, but it's stiff and squeaks at the pedal. Car has 66k miles. I believe the clutch is original
What's the best clutch for a stock car that won't be tracked/raced?
Other things that Ii should do while this is being done?

If you are planing to keep the car stock then stick with stock clutch.
If you want to add power then you have various options. I would personally go with upgraded OEM 4.0RS clutch, lightweight flywheel, but depends on your future goals.

Seems the GT2 disc gets recommended regularly as +1 type fitment, will look through my sub'd threads. Kevin may have a ready-to-go package for it too?
I think it's because it holds & wears better, so you get more mileage & torque capacity for not too much difference in driving feel.

Oh and yes lot's of things to do while motor and/or tranny out: #1 is coolant lines, will let others chime in with recommendations, as I'm building my own list of to-dos and want to compare.

I'd recommend sticking with the OEM set-up.
I up-rated to a "2.5" set-up (no springs on the clutch plate, but still dual mass FW), and now have a (very small, but still there) transmission chatter at low RPM. I also have to be mindful of how hard/sudden the clutch grabs; easy to stall the car if one is being careless...
Mind you, I don't really regret doing the upgrade, because I still muse about giving the car some extra ummph in the future, but if you are not going to bump up the engine output, the above downsides are not being offset by any upsides...

Stock clutch would be good for your use case. I upgraded to Kevins GT3 RS 4.0 with LWFW, 764 PP, and GT2 slave. That doesnt sound like what you need at this time though. As others have mentioned Kevins kits, or the Sachs 2.5 are great if you ever decide to go down the upgrade path.

I thought that the unsprung GT2 clutch disc was the way to go if you were going to do a stock oem replacement?
What are the issues with an unsprung GT2 friction disc? I believe the GT2 clutch setup uses the same pressure plate dmfw, like the stock turbo.

Not being spring loaded can give you a chatter on release not as much as no dual mass flywheel setup!
