Best brake pads for High Speed and for Street?
I don't know if I want the squealing of ceramic brake pads, but I want something with ALOT of "braking grip". I have the gt3 brake caliper and upgraded drilled and slotted rotors up front and rear.

the squealing brake pads are super annoying and noise gets old quick .

I never had issues with ceramic pads, it seems that the metal ones are the ones that squeal. From my observations it seems most ceramic pads don't stop as quick as others.

I had Pagid race pads when I bought my car, and had them switched out to Endless MX 72 pads in both the front and rear because of the same issues with squeaking, etc.... I also have a similar break set-up to you..
These Endless MX 72 pads are unbelievable.. Rarely ever squeaks, and the stopping power is awesome... I would give them a go..

I have had good luck on my Audi with Akebono Brakes ceramics. They don't squeak, and are almost dustless, and yet are easy on rotors. Keep in mind that car does have 6 pot StopTech brakes with 380mm rotors though...very large for that car. Stop tech are the ones who turned me on to them for street driving, and spirited street driving. They did say I would want to switch them out for a track day...though they would take a track day...just not nearly as well as a more aggressive pad.

stock pads are best
If really needing an stopping upgrade, PFC 08/11 work awesome hot and cold but are veryyyyy loud

The Pagid RS421 compound would be a great pad to consider. It will bridge the gap between a standard street pad and a race pad:

I have the cool carbons on the TT x50 cab and have auto crossed and driven several thousand miles and would buy them again. Braking is much better than stock pads. they did take a while to break in, one autocross had them seated perfect and they are awesome, with no fade, where the stock pads would fade. They will stop you much better than oem and are very predictable.
