What Car to add or replace the 996 turbo?

Here's what I ended up replacing my 996 Turbo with:
2018 Dodge Challenger Hellcat. 707hp. 8-speed automatic with steering wheel paddles. Doesn't handle like my Turbo -- only another Turbo would (or my Boxster) -- but it handles well enough for my needs/wants.

You remember right. Back on Dec. 17, 2017 I bought a new 2018 R/T Scat Pack. In white.
I had considered the Hellcat before buying the R/T Scat Pack and talked myself out of the Hellcat.
Then got the R/T Scat Pack and spent the next 2 months reading and thinking about the Hellcat and decided I wanted a Hellcat more than I wanted the R/T Scat Pack, so traded in the R/T Scat Pack for the Hellcat. This back on Feb. 17, 2018. Yep, just 2 months to the day after I bought the R/T Scat Pack.
The car is Insane with a capital 'I' but loving it all the same. About all I can do to resist trading in my new 2018 Mini JCW for a 2018 wide body Hellcat so I can drive a Hellcat every day instead of every other day.
Yesterday at Best Buy picked up a Thinkware F800 dash cam for the Hellcat. Playing around with this to see how it works. So far I'm liking the F800 dashcam. Think I'll move the F800 unit to the JCW and buy a 2nd F800 dashcam with the rear view camera option at Best Buy and have the Geek Squad guys in the back install the cameras in the Hellcat.

Burning Brakes
I recently acquired a 2018 Golf R, manual. It's seriously yanking my chain. So fun, very fast, and people don't intentionally cut me off or give me the finger compared to life in the 05 TT S.

I have a 2016 Golf R, 6MT, purchased new, which shouldn't be all that much different given the minor facelift that the car is reportedly receiving. It's a nice car, but I would not even mention it in the same breath as a 996 TT. The Golf is obviously way more practical, and it certainly has other attributes including its size, hauling capacity, modern amenities, and 292 HP which is a lot for a VW. No one owning a 996 TT, however, is overly consumed by practicality.
Still, it's not an exciting car to drive. It does have power, so it can pass a lot of cars quickly, within its capabilities.
On the negative side, the electric power steering is nothing to write home about, even with the DCC (dynamic chassis control) which my car has and which I have read is to be standard on the Mark 7.5 Golf Rs. The front biased part time AWD is also rather uninspiring. It is very good in the snow, a major plus.

Z/28 would be a good choice, I was surprised by how badly they've depreciated already. I thought they were more scarce, but in the muscle car market I think the Hellcat kind of overshadowed several more balanced alternatives.

I need to give it an oil change and some fresh PCV system stuff, otherwise M5 is ready to go.
This Friday and weekend are open, just waiting to see if this weather holds before I commit.
The GT3 is a great idea I've considered, just more $, already have a turbo one, and I like driving different types of vehicles.

I'm guessing you have never driven or instructed with one of these cars at the track. They are powerful (like the 996tt) they handle well (like the 996tt) and they are heavy (like the 996tt) but they are also very capable when driven at the limit.
