How would you build your dream 996?
Strange thread title, but bear with me.
I recently made a crazy purchase. I picked up a 2001 911 which had been built as a Koni Challenge car before being stripped. Basically I have a bare shell with a full roll cage. Its got a couple of parts still on it, brakes, some sort of suspension, fuel system, wire harness, wheels with hoosiers, etc, but for all intents and purposes, I have a blank sheet of paper.
So, given a bare 996 chassis, what would you do with it? Feel free to be as precise or vague as you'd like. "Sell it" will probably be a common response but this is my own little kit car, so play along if you can.

If you have an urge to track a 996 then build the bare chassis into a track car. This path means you do not have to worry about all the interior bits and their fit and finish, and everytihing else that goes into a nice street car.
If you have an urge to turn the car into a street car, unless you can live with a street car sans everything that makes a modern car a pleasure to spend any time in -- I drove a "track" car (Datsun 510 setup/stripped for auto-x'ing) for a while on the street and it was Hell -- sell the bare chassis.
Then you have a blank sheet of paper.

I know exactly the car you're talking about, I'm glad it went to a good home.
If it were my toy, it would be a "less is more" deal. The only things on the car would be those which are required to make it street legal, start, drive or go faster.

If it were me, I would make it a dedicated DE car and/or step it to a club racer, SCCA or NASA rig. There are some great bones there but I wouldn't want to take on a street conversion with it.

Put a 3.8 in it and keep it light as possible.

Take driving lessons and drive it as is. I would imagine being an ex challenge car, it is probably somewhat sorted already with the weak point being the driver. Goal should be to obtain a SCCA license and go from there.

Talk about a blank canvas! I saw that car for sale and offered to buy just the wing but it was all or nothing. Whatever you build, post a thread with plenty of pics!

Oh, when you said "stripped", I thought you meant stripped interior, lol.
In that case 3.8L if your budget allows, or locate a DFI 3.8L from a Carrera S model.
I would follow it up with 997 GT3RS front conversion with flares since you need to locate lights,hood,and fenders anyhow.
