Default Things to check while dash is out.

I'm having the dash in my '99 996 removed in order to replace the a/c evaporator housing. Is there anything else I should have the techs check while the dash is off since I don't plan to remove it again?

yeah.... top off the blinker fluids.

Upgrade the dash trim pieces. These are the three that go across the dash. Once the dash is out, you'll have no problem getting the back torx screws out.

When I had my previous 996 I was planning to take out all the vinyl pieces and replace with leather. I got about 1/2 way there but when it came to the dash, it just overwhelmed me. Taking that thing out and putting it back in is a big job. I ended up selling the leather dash.

Just be sure none of the little connectors didn't break on the way out and hope there are no squeaks when they put everything back together.

Dumb little thing, but you might want to replace the bulbs that backlight your digital instruments. They do wear out. I had one replaced recently, only to have the next one over go dark on me the same week. Minimal effort and cost, and might save you a chore down the road.
