Default Leather thickness and source for interior re-covering?

I'm looking to re-cover some interior items like my center console with thin leather. I've seen pictures of what others have done (such as https://www.6speedonline.com/forums/...also-pics.html), and it looks pretty straightforward. What I need to understand is what materials people use for this. Is there a thickness or grade of leather that is well suited to recovering interior parts? I live in a rural areas, so I'll need to get materials online. What is a good online source/supplier? I want to have materials in hand so I can do the work as I have downtime between larger projects.

My upholstery guy had to skive the leather by hand to make it thin enough to work over the console. Not sure how the commercial recovery places get around this. There are places that you can send leather to to be thinned but sounds like a lot of extra work and expense. There must be an easier way.

Maybe you can buy some thin leather material from this place (or just send them your console);
