How to determine if WOT is reached
 
When plugging in my OBDII scanner and reading some of the engine data, I notice that my throttle position sensor reads 0 at idle/engine off, but even when I have the accelerator pedal to the floor, it only reads .78-.80%. Does this mean I'm not actually opening the throttle 100% or is this a normal value for this sensor?

Get a helper and, with the car turned off, press the accelerator to the floor while you check the throttle body end to see if it is opened all the way. Note that the WOT switch button is being depressed.

IIRC, that reading is in degrees. With the throttle fully closed the value should be zero. With the throttle fully open (i.e., WOT) the value should be 84 plus or minus 3 degrees. So, it seems you are very near the correct setting. You can adjust this via the nut at the end of the throttle cable under the gas pedal.

OK, thanks guys. Looks like I'm pretty much there, but will try the old fashioned method to be sure. Is it possible to get at the throttle body with the airbox on, or does it have to come out first?
