How does that approach work on a hill? The ST's clutch must also be different than the optioned single mass FW variant in the 911R, which didn't garner nearly as much attention re: durability concerns.

Yes, all 3 of those systems are different from each other. The 911R is most similar to the manual RS cars that came in 997 generation with conventional clutch and single-mass flywheel. CGT carbon clutch is only one with automatic throttle control for starting off. S/T is a bit of a hybrid of Carbon clutch without CGT-style anti-stall software (acts more like a conventional clutch) and has the lightweight single-mass flywheel from earlier 911 cars.

It’s my understanding that bodies are to be all completed summer break. Non PTS were moved up. PTS are being slotted to accommodate painting and CXX if schedules allow.
Now, let me clarify, body being painted and car being finished are two different things and depending upon what options, etc, you could have completed cars beyond and at the end of 2024.
*In the very beginning, the run was supposed to be spread out to November of 2024, but was later changed to getting them all out of paint by end of Q3. That’s what the few week delay was between verbal allocation to dealers and actual allocation to dealers where it caused some confusion, the scheduling was being adjusted.
