Seat colors with Night Blue
I've ordered a Targa 4S in Night Blue that I originally spec'd with Black Leather, but now I'm leaning toward the Black/Bordeaux Red option to lighten things a bit when the top is closed.
My wife says I'm an idiot and should go for Black/Luxor Beige given the exterior. I've not seen either of those choices with Night Blue, I find Luxor Beige to sometimes look a bit bright and garish like the inside of a Butterfinger, but maybe with this blue it works well?

A dark blue exterior over a light interior looks great. The great thing about the black/luxor is you also get the dark dash (cuts down on reflection) and some of the deviated stitching.
If you're thinking about the black/luxor, also take a look at the (slightly more expensive) espresso/cognac, which is a nicer leather and slightly darker than the luxor.

Go with the red dont listen to the haters. Its a sports car brown interiors are boring. Midnight with red will be nkce and unique. You have to realize this forum is most frequented by old farts and nerds. They follow the herd like sheep. Are you a sheep?

Look up Nick Murray's Youtube videos. He has a Night Blue with the two tone Sport Tex interior in dark/chalk.
I think Black/Bordeaux would look great personally, but I would stick with the black cabrio top.
I once had an '87 with linen leather - no thanks on keeping that clean.
BTW, I would self assort to "Old Fart" - not smart enough for "Nerd" status.
