We had a cancellation on our 991 520 Targa 4S slot and I just received an additional 991 510 Targa 4 slot and I wanted to see if anyone wanted to order them before they lock up. The "V200" means nothing to me. No more than AIP, SCO, CPH in my business mean to you. Translation?

It's the vehicle order status code. V200 is the initial status, meaning the configuration can still be changed. At some point the order will become locked and can no longer be modified.

The benefit is the order is already in the system, so that may mean a little less waiting, but you can still modify it to your liking. The OP claims January delivery, so ~3 months (or less) from today. That's not too bad. For reference, my car took over 16 weeks to arrive (ordered first week of Feb., received last week of May), but it was a completely new order, not an existing one.
