Carrera T and RS.2 are 2 of the best from the 991 Gen. Touring would be my third.

A couple of months ago I did a 1,000 mile road trip in the Touring. Last week I just finished a 2,000 mile road trip in the GTS. The GTS was the better car for this kind of driving than the Touring. Quieter but with Touring rivalling (if not better) oomph on the highway.
At lows revs, 1200-4000 rpm, the GTS exhaust is more entertaining than the Touring which really only entertains above 4,000 rpm. You really have to ring its neck to get any emotion out of it.
However, the Touring is much better on track and for short city or back road squirts because, as others have said, the Touring is not a touring car. The Touring also has better brakes and steering. Its much more track focused, raw car. More raw than a regular GT3.
So for me, the GTS has a broader repertoire that is better suited to DD. Of these 3 cars, the Touring is my least favourite because I am not quite sure what it is trying to be. Indeed, at the moment, its the least favourite of all my PCars.

Nope. As reported in a 992 thread, I just completed 60+ laps in a 992 on the Porsche test track at Leipzig. Was fully prepared to buy one, but decided after that not too.
Not because its not good because it is. Indeed, you are getting 991.2 GTS level performance in an S. I just wanted/expected more so have decided to wait for 992 GTS.

Your statement makes me feel quite sattisfied also confirm the valuable knowledge any Rennlist member can get from the forum.
One and a half year ago i decided to proceed with my first Porsche car targeting to build and buy a keeper at least for my case.
Studying the forum and take into account my case and EU relocations in the next decade due to work arrangements i concluded to spec a 991.2 C2 GTS.
This is my weekend car and i really enjoy every time i turn on the engine.
RWD, RAS, PCCB, foldable LWBs, Akrapovic Cats and BBS FIRs make it the perfect car for me.
For sure there are better cars out there and better drivers. But for the next decade i do believe my choise is the optimum.
