Bucket seat options — airbags and matching colors
There's an opportunity to pick up a set of the GT2-style foldable buckets from Carnewal. They're a retrofit option for the 991 chassis, meaning that the plugs for the airbags and such will work. The problem is that I've got an Agate Grey interior and the GT2-style buckets only come in black leather.
311RS seems to be able to redo the leather in Agate Grey for a set of Recaro Pole Positions, though I'd lose out on airbags and the folding rear seats (the folding is less important, though).
Investigating what options I have, what do you all think?
1) Find a shop to re-do the leather to Agate Grey for the black GT2 buckets.
2) #yolo it and pick up a set of color-matched 311RS seats at a good costs savings (defeatable airbag light?)
3) Live with mis-matched seats.
I'm in the Seattle area re: upholstery shops. Here's a quick photoshop job of black leather buckets in an Agate Grey interior:

FWIW, the airbag light is not defeatable, even with the PIWIS unless you reset the entire system and recode the entire car. Not recommended. One false move, and you brick the system, and car becomes undriveable.

The seat center sections can easily be done in agate for a two tone seat as another option. Call it 1a. I would only go with the GT2 seat for a street car because you retain the airbags and if you are in an accident there are no issues with your insurance company over defeating standard safety equipment causing injury.

I would email Frank from Exclusive Option. Their work is as close to OEM as it gets.

airbag light will persist... 311rs has no solution (nor any other seat vendor)
