Before your dealer submits a customer order/build to their system, the allocation is only by month. Once the dealer submits your build with your name on it, the Porsche system will turn your status to V200 (assuming you optioned need further review), at that time an exact build date will be determined.
Yes quarterly, but with exceptions. Like when new models come out, or additional production batch etc. A lot of allocations will be rolling out throughout the year. As of now, GT3 should be produced till May 2019, but of course these things change all the time, like later determined additional production batch as seen on the '16 RS and GT4.
They are still being determined, quite a while away, 2021/2022. GT department and current heads want to keep it NA, but there will always be pressure from the top on emission and costs. The next Euro emission cycle could become 3X more strict. So just like the manual/PDK, they will test out both in the mule and present the results internally before they decide.
570S really depends on your preference in a sports car. Obviously McLaren does not offer NA or Manual, and if both are of extreme satisfaction and enjoyment to you, then its probably not your car. If you're fine with double clutch and turbo, its a very capable car for the price point. Personally I still like the front axle steering feedback of like a GT4 and RS better, but its good too, not bad, just different. The flashiness of the entire car is one of my concerns, if you like it, then its good too!

If this is truly the case, that is almost 2 years of production ahead of us. Wouldn't that satisfy all demand? Wouldn't that mean no one should be paying ADM?

Perhaps? I don't know. The 991.1 GT3 produced 3 model years, but last model year was basically nothing, and first model year stopped production for awhile due to the engine. A lot of people got the car but it still didn't completely satisfy demand and some of the '16 dealers were still asking ADM.
Its pretty evident already at this point that the initial demand for the .2 GT3 is higher. Again, initial demand does not mean constant demand throughout 2 years, so its hard to say. Price a decent amount higher, options are higher priced, so that's going to turn some people away.
We will just have to wait and see

Basically two model year of production.
GT3, GT4, GT3RS, 911R, Boxster Spyder are all the same model year. How crazy is that?

I can tell you almost no one knows the exact number. They determine large scale production numbers yearly, and small scale productions adjustment quarterly. Even the plant managers won't know how many will be made in 2019 until later.
But I can tell you its safe to assume the ball park will be similar. No, production will not double. No, production will not be half.
