Default Canyon Drives - Just wondering

I see a lot of mention of the driving in the canyons by the west coast RListers and also have seen these drives on you tube and other channels. The roads are definitely great and as an east coast person I am definitely envious. My question is how fast do you guys get on the faster sections when it is clear? Why are there virtually no law enforcement present on any of the drives I have seen? Does the CHP turn a blind eye to driving on these public roads at speeds way above the speed limits? What are these speed limits anyway? In shows like One Take with Matt Farah, I see that he is definitely over the speed limits in most cases, even though he covers up the speedometer. It is not hard to figure out but I guess the traffic cops there can't do it or won't. I get pulled over here for being 7 mph over the limit. It seems that if you get up early enough, you can drive almost as fast as you want in the canyons.

During week they are patrolled lightly
On weekends very high chp presence
And they definitely don't turn a blind eye
Some people drive like a holes and a danger to the people around them
Some people crash and die
I've seen many wrecks from idiots.
Mistakes mean you're over a cliff or in a tree
Most tend to take at a spirited pace not too crazy

I wondered if these Video guys have people up front scouting the road ahead for law enforcement and let them know - because they all seem to speed and not have an issue.
