Would love to, I'm UK based though so might be a bit late for me!
I've not had a chance to drive my GT3 since the iRacing car came out so looking forward to seeing how real and virtual match up.

The Porsche Cup Car is fantastic - much better driving dynamics then the Ruf Track Car - not sure why. The Le Mans races last week were a lot of fun. The iRacing tracks are so close to the real thing - its amazing.
Nicki Thiim has a YouTube channel. The former SuperCup Champion and current WEC/Aston Martin factory works driver is a lot to fun to watch. He has a video on how to set up the Cup car.

I had a go over the weekend with a complete Fanatec Setup + HTC Vive (VR Headset)
Wow - that was pretty damn impressive!
I'm leaning towards running a complete Fanatec Setup (their top end gear). Is anyone here running Fanatec? I'm particularly interested in seeing people's experience in the V3 Inverted Pedal Box vs the Standard V3 Pedal Box?
I have read great things about HE Sim Pedals - but I don't know if I want to spend those Dollars Just yet without having tried it. Do you have to make a custom mounting plate to Mount HE Sim Pedals?

Amazingly I bought my Hyper cockpit in 98 and whilst expensive at the time its lasted well. This was a couple of years ago after I'd mated it to a D-Box SRP230.

You can get going on a low budget if you are thrifty.
My rig is follows
Macbook running windows via bootcamp -1200 (already had it, good enough pc can be built for half that)
PCV rig built from plans on a forum -150 (used lowes gift cards I had laying around from the inlaws for christmas)
Vizio 43 inch tv -298 shipped online
Logitec g920/g29 pedals/wheel -299
Mx5 seat on sliders I had laying around -free
GTE brake spring for the pedals -25
Now that I'm up and going I'm more motivated to slowly upgrade each portion of the rig one at a time. I would have never sunk 4-5k into something like this in one fell swoop. It's a ton of fun as is. Next upgrade is a nice PC so I can run triples or VR. It's tough running side by side in corners with the single monitor setup.

I wouldn't waste money on three monitors again, go right to the VR goggles they blow the monitors away.
This assumes you have the computing power to handle VR goggles.
I'm running simxperience stage 4, it's incredible, if you have the means and can assemble mechanical stuff, it's the only way to go. I have $13k in it, worth every penny.
