Congrats! I just bought one of these Arena Red GT3s last week; it's such a beautiful car in person, pictures don't do it justice -- must see in person to appreciate, wouldn't you agree? Everywhere I have driven it I am bombarded by onlookers and folks come up and comment on it; that never happened with my 991 Turbo.

Create Order will fulfill an allocation and generate a V200 status (or V170 if you have Exclusive/PTS features).
Create Order Demand will put it into a "wishlist" of sorts, which only tells PCNA that you have a client who wants to order this car. But it will also generate a commission number, which can be "tracked" but generally it will stay in the V060 status. It won't be released for Order until the dealer gets an open allocation to build that car.
For example, I have 19 people with "waitlist" orders, for things like GT3/RS/ 911R/GT4. It's basically me telling PCNA that we still have a high demand for these units, even though I know in reality they will not be fulfilled (anytime soon).
Hope this clarifies... You have to have a commission number with a V170 or V200+ to have an actual allocation.

Nice car though and stunning color, but not very exclusive now that it's available on standard 911.
