I was gonna get the weathertech as I have them in my other vehicles....just to clarify, there's no GT3 selection so I'm assuming the 911 (991) mats are the ones?

This is correct. I also have the WeatherTech and love them. The fit great in the GT3 and snap down so there is no movement. I think they look good too. I have seen them with a Porsche logo instead of the WeatherTech logo, which would be nice.

+1 on the WeatherTech mats. FWIW, if anyone's wondering, took the mats out of my Cayman 981 and they fit the 991 GT3 perfectly.

I just purchase a driver side track mat. How did you install it? Did you cut the velcro pad they provided into two sections and apply it front and rear on mat?

WeatherTech are excellent. Used them in many cars - mostly the trunk liners. For protection, I'd go with them

However the OEM mats from Suncoast are surprisingly cheap. I bought a set of basic black ones for my RS. I bought the car new but got it too late to configure and it had ridiculous CXX mats in it. I think the OEM Suncoast ones were about $100 delivered. At that price why not just treat them as a wear item and replace them every now and again? They look good, feel good and can be easily refreshed.

Stick with carpeted mats and pick yourself up another car to drive in inclement weather, dirt roads, etc.
