That is quite the build!
Is there a particular reason you skipped the Interior Leather, Sport Seats Plus Backrest Shell in Leather, XWK?
I keep thinking mine is over the top. I'm considering dropping the seat backrest shell in leather, the instrument surround in leather, the fuse box cover in leather, and the illuminated stainless sills.
Here is my build for reference. Plan to have the wheels powdercoated locally in satin black.

Whoa! Well I guess if you have the flow and can spring for all those extras w/o much of a thought, then go for it (mostly). I'll only comment on the things that I'd find objectionable if your car showed up in the used market in a year:
- not a fan of red dials. overboard IMO.
- clear tail lights look like german rice to me.
- PCCB I'd skip if you plan a lot of track time; from your spec I'm guessing not so you'll be OK
- I think the all black wheels aren't flattering to the wheel design; stock finish is preferable
- carbon fiber: looks cool but it's just for decoration and not structural/functional. I'd skip.
But again all this is in the eye of the beholder.

That is cool - get what you want. I don't even like posting my build specs because then no one will have the exact car as you. Otherwise you will get comments like a "lot of fluff for a GT3." That is something the dealer might spec out to make as much on the car as possible. Unique color - should look great. Post pictures when you get it.

I'm actually curious to see what the full-leather treatment like this looks like, even on a regular 991, but can't find pics. The configurator doesn't show these changes. Dash in leather, dashboard in leather.. That HAS to look really cool, and feel amazing when you're sitting in your car.

mcs, my issue is that full gloss black can have the effect of looking like old cop car wheels. The wheels just blend so much with the tires.
A satin black can be nice though. In my last GT3 I had black but with a polished circumference, which, to me, helps set off the wheel from the tire. In essence, I think black wheels need a contrasting hue.
Black wheels on my Tundra (boat hauler):

But again, this is all personal preference. I don't think there's a right or wrong answer. But when someone posts a build up for critique, that's what will happen.
Based on pictures, the new wheels look sexy as hell. The gunmetal finish, in the flesh, I believe will really show off the rear dish and aggressive spokes; they have an organic look. I hate to cover all that goodness in black, which tends to cloak nuances.
EDIT: you could always order in standard and if you dislike them, have them done aftermarket. One reason to have Porsche paint your wheels black is to get the contrasting polished circumference that I would not trust to aftermarket. Painted monotone should not be a problem.
