My understanding is that Ferrari disengages with both paddles in as well??
My 2003 Ferrari 575M Maranello with F1 Transmission operates the same way:
Pull both L&R Paddles for Neutral. Right only upshifts, Left only downshifts.

It's for burnouts, donuts and drifting...the official explanation sounds like BS. Not sure who's declutching when understeering in a wet corner.

Why didn't the just add a 3rd pedal that would do the same thing as puling both the paddles?
