Definitely follow Mayor Adam West’s route I lived on Skyline Blvd for many years.
After you leave Alice’s head towards La Honda - the birth Place of the Merry Pranksters. Ken Kesey’s ( author of One Flew Over the Cuckoo’s Nest ) log cabin is still in town.

San Gregorio General Store is a cool stop - some local flavor and local characters there.

A must visit IMO - order the soup. Ask for half creamy artichoke and half Creamy Green Chile - it’s awesome.

If your in the mood for Mexican stop at the gas station Mayor Adam West mentioned in Pescadero - it’s right across the street from Duarte’s - incredible tacos n burritos- I make it a rule not to eat in gas stations but this is an exception.

I'd +1 Rocky's suggestion.
Highway 1 between San Francisco and Monterey is just "okay," whereas the mountain roads and redwoods are great. Highway 1 south of Monterey is an amazing, word-class route — so I'd suggest you optimize for and take in the mountains and redwoods on your way down to Monterey, and then spend the following days exploring Highway 1 down to and south of Big Sur (and consider driving down to Ragged Point and back).

i like the Mayor's route as well.
only word of warning, as you head down Pescadero Creek Rd, there is a good stretch that is posted 25mph.
i've seen the sheriff's dept hanging out down there enough times that i always go slow in that section.
the Hwy 9 route into Santa Cruz is a good one too.
