Default Ceramic coating undercarriage/suspension

Does it help protect underside of car from salt corrosion? I've seen mixed opinions online.

Theoretically, yes, coating the underside of your car would help prevent corrosion, but it's not worth the time or expense to do so. You would be better off simply performing thorough washes throughout Winter to remove the salt and road debris, keeping corrosion at bay.

The other aspect to consider is that for coatings to work properly, the prep stage of making sure that the car is completely clean and residue-free is the most time-consuming part of the work. To properly prep the underside of the car would take hours/days, and at that point the cost to do so wouldn't be worth it.

I am so tempted to spray my car with waxoyl (which is similar to cosmoline).

Nonsense.

If you waxoyl metal and keep it up every few years you can drive in a salt mine. Fluid film works too and does not look like hell, but you have to do it annually (or more often).

Not much should corrode on a 991, but I worry about galvanic corrosion between the aluminium and steel parts.

This!
I live in Wisconsin were salt is poured onto the streets almost daily. Even if you wash your car daily to remove the salt you will get corrosion. Better off parking the car during winter. Yes it Sucks but in 3-4 years place the car up on a lift and you will be able to spot the cars that were driven in salt from the cars that weren’t.
