Wider wheels on GT3
My car is 95% track and autocross.
Have been running 275f and 305r Bridgestone RE71R on 19” Forgelines. But next year I will be running a 265f and 325r Hoosier. I have read many have used this combo on a non-RS with no rubbing. I know the 295 will rub on a non-RS and I don’t want to do flares just yet.
The section width of the 265 is over 10” and the section width of the 325 is over 13”. So a 10” front and 13” rear should technical fit but I haven’t seen any one run this except on an RS. Has anyone tried fitment of a 19x10 f and 19x13r on a 991.1 or 991.2 GT3?
My alignment has been continuously tweaked using tire pyrometer readings. On the Bridgestones optimal Camber is -3.0f and 2.7r. Not worried about the outer fender clearance with this setup.

I run 265 front and 325 rear Hoosier R7's on 19" BBS wheels (on my 2018 991.2 GT3) and have no issues whatsoever. You should be fine.

What offsets are the wheels?

I know the tires will fit. It's the wheels I am wondering about. I haven't heard of anyone running a 10" front and 13" rear on a GT3, but those tires both have section widths over 10" and 13" so I am assuming the wheels could be that wide.

You'll need to contact a high end wheel store...someone like Wheels Boutique who's a sponsor on Rennlist and also ask a high end involved wheel company that is extremely familiar with GT3's like HRE or Forgeline if the wheels and tires will fit. Also there are some wheel calculators out there that will show you how much extra the wheel and tire will go inward and push outward. They you'll need to get the car on a lift...lift by tires and look underneath and do some measurements

10" won't fit in a 991 GT3, 13" wheels won't fit the rear either, you will eat liners, wires, and some metal rubbing with the inner body is guaranteed, the car has RWS, so you need to factor the 1.5 degrees angle on both directions (makes a wheel/tire virtually even wider).
A 10" wheel is 11" wide, a 13" wheel is 14" wide.
The tires fit fine, the 265 Hoosier is actually based on the 245x18, both 235 and 265 Hoosiers are only 5mm apart in width in the 19" sizes. The 295 won't fit either (regardless of wheel), but you can buy spare fenders, wrap them and cut them (or upgrade to RS fenders, a little pricey).
The 325 is the same 315 width but a tad taller (better load rating), it fits just fine. 345 won't fit.
On my RS I run a 9.5". My measurements show that a 10.5" on the 295 tire would work as well, but keep in mind that the RS is 2" wider on the front body than a GT3. I tried 315 and rubs the front springs, but 7mm spacing fixes it, no need for a 315 as the car is too light for that tire in the front axle.
You can gain so much more in other areas than trying to squeeze wheels that won't fit. Driving skills are the highest limitation I see out there with all cars on track/autoX events.

I run SCCA Tours and Nationals autocross, and we trophied but didn't win at Nats. In 2017 the winning car in SS was a 991.1 GT3 with a 295 RE71R on the front on the stock 9" wheel. It rubbed, destroyed the liner, etc. but that's what it took to win.

Here are some pics of my setup. I worked with Apex and BBS when I purchased my .2 GT3 and don't recall the exact width of the wheels. I was more focused on making sure the wheels cleared the brake calipers.
Here are a few pics...
