congrats! I told you it was likely you were getting one if they held on to your money this long. let's see the rest of your build!
For the cage - I did GMG, harnesses Schroth. keep in mind that the red Schroth harnesses aren't guards red. And yeah, if you're gonna run a cage and harness, at that point a hans or other neck restraint is no brainer.

They are not the ones who provided the allocation. Will post up the build soon as I finalize it.
Why did you go GMG?
For harness I think Race Tech seems to try to match a few paint colours. They have a Miami Blue and will have Lizard for 3RS.

Congrats, good luck. On your mods: 1) suggest you wait to hear the stock sound before bolting on an aftermarket exhaust, it sounds great as it, 2) i went BBi after some research on this board and seeing some different installs. BBI fits the internal contour of the roofline and can be installed without cutting any body parts (only carpet), but otherwise you have it right, they all look pretty similar, I think GMG may use a different type of steel..., 3) I'm going with Schroth harness, which is what comes from the factory if you get the clubsport package, and yes, if you have a harness, you need a head and neck device (schroth, HANS, etc.), and 4) so far, i put on a wing decal (i have pictures on my "worth the wait" thread which is on page 1 or 2 of this forum.
Enjoy.
Enjoy.
I will wait until I hear the stock exhaust, but I feel like I'll want something more. Videos sound great but are hardly ever good representations for both stock and aftermarket. I thought the GT4 could've used a boost in sound. I also have Sharkwerks centre bypass and Cargraphic sides on my 997.2 and well the GT350 is a beast. So I suspect I'll want something more.
Any thoughts on which neck restraint is best?
I think the major players all promote carpet cutting as the most invasive part of the install. But good point on the BBi following the internal contours best, wouldn't have thought of that and I don't think I read any of them promoting that feature. Is this from you seeing different ones installed or from marketing material?
I'll be sure to check out your thread!

Congrats on the allocation. As they say: patience is virtue. Which I know I lack.
In terms of mods, im hard headed. if its not going to make the car better, Im out. That said, for roll cages, I would look for a 1 piece design for the main bar. I’m not an engineer, but have read about metals and metal weakness after welding. So I would also consider what metal your roll cage is made out of.

Why did you sell the GT350? I was recently contemplating the same thing to pursue another car. Also have a deposit on the GT500 depending what the final car ends up being.

I agree on your principle which is my debate on the centre delete or side delete. Doing both might give a result I don't want. Side delete removes most weight and reduces heat soak at the rear tires. Side benefits of potential subjective sound improvement and maybe something on the direct performance side. What is the main bar? The one that goes parallel across the width of the car?
