No one has mentioned it, but the Turbo S is AWD. That gives it an advantage from a dead stop start putting all that power to 4 wheels. As the OP stated, TC kicked in when the wheels started to spin, made the GT3 bog down.

Makes sense when you run the numbers:
The Turbo S is listed as .5 seconds faster from 100-200 kph than the GT3 using Porsche’s own figures. The TTS’s passenger is going to close that gap, but probably not by the full .5 seconds.
On the the other hand the GT3’s manual transmission has a little less parasitic friction vs the TTS, ditto for RWD vs AWD. As a result ~15 more of its horses make it to the ground vs the TS, closing the on-paper wheels power gap down to ~12%. On the other hand the TTS is 13% heavier increasing to 18% when the passengers are accounted for, giving the GT3 a ~6% power to weight advantage. That’s countered by the TTS’s faster shifting, better area under the power curve and slight aero drag advantage. Going to be close any way you slice it...

I am not surprised by the rolling race results. Even back in the 997 era, the GT3s were over performing Turbos in certain metrics. Even Chris Harris mentioned it in a video the GT3 is quicker 100-200.

My gosh, if the .2GT3 is this good/fast, how bonkers must the .2GT3RS be! I want an RS so bad now...
