^ Maybe a dumb question but I assume you put your stock wheels / Cup2s back on when not that the track. If so, any rubbing issues for street driving with lower tide heights?

i have, works perfect.
More grip, better gearing and no SC issues. Another big advantage is that the car goes down a lot AND you can play with rake a lot more for better setup.
Tried both 235 /345 and 265/345.
265 front needs the computer to learn for a couple of laps and then SC stays quiet.
the tire stays fast much longer into the session and combined with ST Rotors the car is way more consistent.
took 3 seconds of my time. 2:16 VS 2:13 now
Here is an update for you though...
My friend tried running 295/315 which is a 34 tire rev difference and had no issues.
I originally though this would cause over steer issue but he said it did not, and I think the 295 would provide better breaking since I find that with the 235s, by the second day my breaking is not as good since the tires are so much smaller up front and lose there grip even quicker because there is less overall tread.
Going to give it a shot next track day and see what happens, will prob also set my sway bar in the rear to soft to compensate for the smaller rear tire size.

I'm on my second set of 265 fronts and no problem at all with SC or TC.
We tried 295 front and the diameter is the same as the 235. I've ordered a set to verify for myself that it won't rub at Sebring but we have tried it on the road and it all clears.
Try that first, 295 / 345 I think will be better.

My friend already tried the 295/345 which honestly would be the best combo as far as traction, he had TC issues after the first session, but I am totally baffled how you got the 265/345 combo to work without TC issues for the following reasons.
If you go to tiresize.com and click on Hoosiers then R7 it will show you revs/mile for each tire.
Stock OEM SC2's are 37 revs/mile per difference and the Dunlap's are 40.
So for the Hoosiers that we already tried the Revs/Mile difference...
265/345 - 18 (TC Issues Really Bad)
295/345 - 21 (TC Issues Bad)
265/315 - 31 (TC Issue Slight)
235/345 - 37 (TC Issue None)
295/315 - 34 (TC Issue None)
So on that note 265/345 only being 18 difference was the worst combo I tired so how did you get them to work???
Also diameter on the 235/35/19 is 25.6 and on the 295/30/19 is 26.1 according to tiresize.com so about .5 difference, it would also make the stagger down to .7 with the 295/345 combo where stock is 1.4.

So the GT3 guys are running 265/325 R7's Hoosiers and not having TC issues.
Do you have PCCB's or Steel?
