First drive back in the UK trying to get the cutting out issue to show itself.... It didn't, but it was still fun.

I thought I'd update this thread as I hate incomplete threads. I've finally found the issue after a lot more investigation.

After replacing the crank sensor, TPS, the entire ignition system and testing all involved relays it was still doing it. So I replaced the fuel pumps with two 044s. This didn't fix the issue. It actually made it a lot worse. So that pointed to the electrical supply to the fuel pumps.
We'd previously tested this, but because of the intermittent nature of the fault it didn't show any issue. Now the 044s were demanding more power it was happening all of the time. I ran a new positive to each of the fuel pumps with a new larger relay and the fault is fixed.

yes always run relays to my pumps if you measure the voltage at the pump without a relay you will find a significant drop so pump is not then performing at its optimum
