Sounds as if it's the small blower that sucks/blows cabin atmosphere over the IAT sensor.

I have a broken sensor at the right mixing chamber, taking it out there was no resistor present anymore, only the two wires that held it
Did anyone find out it it is indeed a NTC, and what value?
I found this one:

That might do the trick?
Seems silly buying a new sensor for approx. € 160,- while it really is only a € 0,50 component that failed?

I'd say that's the one. I have a spare HVAC harness with sensors, and I got correct ohms as per the spec. info from your link for the 4300K (0 deg C/ 35K ohm and ambient 27 Deg C/ 9.2K )

The sensor is indeed an 10k NTC, the above mentioned type will be fine.

You could choose a "water drop"-type sensor instead of the disc type. This is smaller and might have a faster temperature response. It could be easier to place into the plastic tube too. Soldering in a new sensor is done in a few minutes.
