Chris, considering how shallow the open deck on the 3.0 block is, would you recommend this stuff for that block?

either of these what you use?
The Loctite® Professional Epoxy looks pretty good too.

How much would it need to be filled? On 2.5liter block? Like and inch (2-3cm's) or more?

On my 2.5l block I filled up the water passage around the cylinders to a bit higher than the 3l blocks.
Around half the volume left, or even a bit less. Works perfect.

Yes, becasue you add it to the bottom of the block not the top!! Fill in the voids in the block to the bottom of the cylinders.
Duke does have a good idea to add it to the top side of a 2.5 block to bring the floor up. I haven't done that so its just a theory to me at this point!!

I'm going to to this as right now my 2.5liter block is stripped, on the stand staring at me and demanding some strengthening action

Make sure you rough up the surface so that the epoxy has a good texture to adhere to.

I honed my block after the grout had been applied.
