Will Cayman 17" 8" wheels with an ET40 fit an S2?
The stock 17" Caymen wheels came in two sizes - 6.5" ET55 up front and 8" ET40 in the rear. I know the 6.5" ET55 wheels will fit, but would the 8" ET40s fit all four corners? Or is that ET too shallow?

Yes compared to a D90 8x16" ET52 S2 Wheel, the Cayman 8x17 Et40 will stick outboard by approx 13mm 1/2" the inside will be further away from the body.
If you fitted a 235/45/17 Tyre I think these will be fine on the rear, but the 6.5 front is a bit too narrow and if you fit a 205/50/17 there is a difference of 1.5 inches (6.5" Narrow Rim / 8"Tyre Width)
If you fitted the et40 8x17 's on the front also this would also stick outboard by almost 30mm compared
to a 7x16 Et55 D90, this is too much and will change the Scrub radius angle and produce adverse handling.
Look for a 986 Boxster set with 7x17 & 8.5x17 they will fit better, like In once had on a 968

Thanks - I didn't think they'd work. It's hard to find wheel choices for these cars There are lots of great-looking aftermarket wheels, but they usually start at 18", which is bigger than I want to go.

Depends.
Track...definitely. Canyons...probably. Street...probably not.
Regardless, a 205/50 will still be pinched on that rim. If you push the car in the canyons, or on the autocross course, it will undoubtedly understeer. Running to Home Depot or Publix, or taking the girlfriend out to dinner, doubt you would even notice.

Are you running the same set of Cayman rims as the OP inquired about...6.5"/8"? What are you using for summer tires? Which sway bars are you running...23mm/14mm?
When pushed in the canyons or at autocross, is your car slow to turn in and does it understeer past the apex?

Thanks it was the beginning of the whole lightweight wheels obsession where I sold the original 7.5 7 9"x17 cup set and then fitted the BBS Lattice Boxster set which was 20kg lighter and made the car so much faster !
This car also was the fastest transaxle I'd owned at the time from a 928 S2 4.7 V8, (5) 944's and (1) 924S
But it's not the Daddy any more, I can't back to back them but I'm 99% sure the 924S 2.7 is quicker than the 968.

The 986 Boxster ran a 6.5 and a 205mm tyres, the stock 924S had 6" and 195 tyres, and some people fit 225mm tyres on a 7" wide rim on the front
which is a 177mm wide rim width and a 225mmm tyre width a difference of 48mm!
So a 6.5 @ 165mm wide with a 205mm tyre is only a 40mm difference.
I run 205mm wide on a 7" (178mm) a difference of 27mm and this works exceptionally well (dry / wet / road or racetrack)
