welcome to the craziness of 928 ownership.
You can't use only water. You need to have some corrosion inhibitor otherwise corrosion will eat up you engine from inside. My car as run with only water (sadly normal in Thailand) by PO and have some bad pittings in it.
If you have original fuel lines then change all the rubber parts before you drive the car. Mine looked perfect when I bought the car but when I bent them slightly the rubber just cracked and split the hose in two. Tropical climate isn't nice to rubber.

Plenty to do but that's part of the fun.
Coolant raises the freezing point (crucial where I live!!) and LOWERS the boiling point (crucial where you live!) along with lots of other goodies like rust inhibitors etc... you need it, no, your engine needs it
Somewhere along the lines your car appears to have been towed using the cross brace, that "stretch" has to come from somewhere, so check your bolts/mounts when you replace or repair it. You of course will know, this is NOT the place to tow your car.
Further to Stans comment regarding your air cleaner element, it will have to remain as it is now, until you replace it, otherwise all of the crud will get sucked into your intake when you flip it, I would not trust using compressed air as being sufficient enough to blow it all out either (Apologies if is obvious to you, but better I say it methinks).
Anyway, read, learn, and enjoy!!!

First off, welcome. You've found the best place and the nicest people when it comes to these cars.

The seat switches are known to go bad. You can fix them, there's a really nice "how to" here:

There is a little allen bolt under the front of the seat. Use an allen wrench (also known as a "Hex Key") to turn it to move the seat forward and back. It drives a plastic gear, so be gentle. The gear is also missing a tooth to allow the motor to move the seat without turning the gear all the time, so it will 'skip', you may think it is stripping. It's supposed to do it some, but not a lot (again, it's a plastic gear, be gentle).
You can also remove the plastic cover and reverse the wires going into the center motor (there are three). That will allow the seat to go forwards when you push the switch to go "back".
Doing the seat switches is a lot easier if you take the seats out. Run the seat all the way forward to reach the bolts in the back, all the way back for the ones in the front.
While you are in there, you can clean up and lube the jackscrews that move the seat forwards & back.
Window switches are also pretty common failure points.

The thought of owning and caring for a 928 in Brunie boggles the mind.....They got their one and only Porsche dealer in 1997 !!!! Basically means none of the techs were ever trained on the 928.
