Congrats on the find! I did the same when I "found" my 91 GT. Replace all fluids and belts, TB/WP, AC refresh, electrical clean up, etc. I also was concerned about the antifreeze, and used litmus strips to check. Luckily, mine had been stored with 100% antifreeze, no water so no issues with the block/head gaskets. Drained and filled with correct antifreeze/water combo. 4 years later and 16K miles and no issues.

Yeah, I've been reading the threads on "no keys" "rekey" etc. Talked to 928gt.com about them placing the order for me, $85 or so, pretty reasonable but as you said, Porsche requires a title in order to place the order.
Problem is I'm planning on six months or so in Title purgatory, not sure if the alarm will prevent me from starting it once the ignition cylinder is pulled? Haven't even applied a battery yet but my guess is the alarm is going to default to ignition=disabled until the door lock is operated.

For the alarm - Was the door locked? Keep in mind that the alarm has to be armed by locking the doors or turning the key in the hatch lock the "wrong" way. If it isn't armed, it won't disable the car.
And it can be disabled by jumping the correct connections in the CE panel (don't know exactly, but a search should find it).
Also, you can simply turn the alarm on and off by manipulating the alarm switch at the back of the door/hatch lock cylinders. It requires getting to the back of the lock cylinder, but once you do, you can arm and disable the alarm.

It "kinda depends" on the title situation to get a key. For my 944, the registration in my name was good enough. For my 928, I offered to show the title or registration, but they said I didn't need to (same dealer, different people). If you can find a dealer to trust you (or who will accept whatever sort of documentation that you have) it might work.
